According to bonboncandies.com the history of fudge is unclear, but it is thought to be an American invention. Most believe the first batch was a result of an accidental “fudged” batch of caramels, and why it was given the name “fudge”.

The first known record is from 1886 when fudge was sold at a local Baltimore grocery store for 40 cents a pound.

Traditional fudge is loaded with sugar, but there's no reason why we can enjoy a treat with this Keto Chocolate Fudge!

Why Powdered Erythritol or Monk Fruit in Easy Keto Chocolate Fudge Recipe

Since regular cane sugar is dangerous and has way too many carbs, we need a good healthy substitute.

Artificial sweeteners contain chemicals that have been linked to cancer, autoimmune flare ups, brain fog and more. Back when I was consuming aspartame, I felt bad all the time and ended up with thyroid cancer.

Regular granulated sweeteners substitutes, like erythritol, would leave the fudge grainy.

Using a powdered sweetener like this powdered erythritol , leaves it smooth and without the bitter aftertaste you can get with some liquid forms.

You can also make your own powdered sweetener by running your favorite granulated one through a coffee grinder, food processor, or high-power blender, like a Vitamix. Just make sure it’s very fine when you finish.

Dairy Free Keto Fudge

By using coconut oil instead of butter, this fudge is also dairy free. Coconut oil also contains MTC oil which is excellent source of healthy fats for your body.

You could probably use butter, just make sure it is grass fed.

Why Cacao Powder Instead of Traditional Cocoa in the Easy Keto Fudge?

Traditional cocoa is processed at high heat, which destroys most of the nutritional benefits of the cacao seed. What a shame!

Cacao powder is made of fermented seeds that aren't roasted) but processed at low temperatures and then milled into a powder. This way, the nutritional benefits and the bitter flavor stay intact.

Organic cacao powder ensures it isn't covered in pesticides.

Since I learned this, I use only organic cacao powder like this one when baking.

Keto Chocolate Fudge

Ingredients

  • 1 cup Coconut Oil
  • 1/4 cup Powdered Erythritol
  • 1/4 cup Cacao Powder
  • 1 1/2 tsp Vanilla
  • 1/8 tsp Salt
  • 1 cup Nuts (Pecans, Almonds, Walnuts) Optional

Instructions

  • Line an 8X8 pan with parchment paper, leaving some hanging over the sides.

  • Using a mixer on low speed, beat the coconut oil or butter and sweetener together, just until fluffy and combined. Very important not to over beat so the coconut oil does not melt.

  • Add cocoa powder, vanilla and Himalayan pink salt. Do not over mix.

  • Stir in nuts.

  • Transfer mixture to lined pan and smooth out.

  • Place in refrigerator for 45 minutes to an hour and allow to harden.

  • Run a knife along the edge to loosen up the fudge. Lift the parchment paper out and place the fudge on a cutting board, removing the paper.

  • Cut into 16 pieces

Hints For Best Keto Fudge

Follow instructions to beat the coconut oil, do not melt!

Keep your mixer at low speed, and only beat long enough to mix together. If you turn the speed too high, or beat it too long, the coconut oil will melt and the results are not good.

Sawing the Keto Fudge will cause it to crumble so come straight down with a large sharp knife.

It's also best to clean the knife in between cuts.

If it continues to crumble, let it warm up a little to room temperature.

Store fudge in refrigerator and let come to room temperature before serving, but don't allow it to melt.

If you don't eat it all (which I can't imagine – ha), you can freeze the fudge.

Length: Up to 1 year

Freeze in pieces:

  • Wrap each piece with an airtight wrapping material, such as aluminum foil or plastic wrap.
  • Place each wrapped piece in a resealable plastic bag, removing all air.

How you thaw the Keto Fudge is important:

  • Remove it from freezer
  • Keep in plastic bag
  • Let is sit in plastic bag at room temperature until thawed
